Vanilla and Cardamom Macarons Recipe

  1. Prepare Baking Sheets:
  • Apply silicone mats or parchment paper on two baking sheets.

  • Sift almond flour, icing sugar, and ground cardamom into a large bowl. Set aside.
  • In another clean bowl, beat the egg whites with an electric mixer until foamy.
  • Add cream of tartar and continue beating until soft peaks form.
  • Gradually add caster sugar, beating until stiff peaks form and the mixture is glossy.

  • Carefully fold the almond flour mixture into the meringue in three parts until the batter flows off the spatula like a ribbon. Be gentle to avoid deflating the meringue.

  • Store assembled macarons in an airtight container in the refrigerator for at least 24 hours to let the flavors meld.
  • To get the greatest texture and flavor, bring to room temperature before serving.
